A simple yet elegant pasta dish: linguine with tuna, capers, and Roman mint. The secret is not to cook the tuna and to use a flavorful fish stock.

Ingredients

- Capersdesalted
- Roman Mintfresh Roman mint
- 1 pcsGarlic1 clove, halved
- Extra Virgin Olive Oilextra virgin olive oil
- Fish Stockfish stock (homemade or good quality)
- Tunagood quality canned tuna
Method
- Boil the linguine in salted water until al dente.
- Meanwhile, chop the desalted capers and fresh Roman mint together to make a coarse paste.
- Cut a garlic clove in half.
- Heat a drizzle of extra virgin olive oil in a pan and add the garlic halves. Brown them.
- Lower the heat and add the chopped capers and mint. Let the oil absorb the flavors.
- Deglaze with fish stock (fumetto di pesce).
- Lower the heat and add the tuna. Do not cook; simply flake it into the pan and turn off the heat.
- Remove the garlic cloves.
- Drain the linguine al dente and transfer to the pan with the sauce. Finish cooking the pasta in the sauce, adding more fish stock if needed.
- Finish with a drizzle of raw extra virgin olive oil.
- Serve immediately.
