Pappardelle with Porcini Mushroom Ragu

A hearty Italian pasta dish featuring fresh pappardelle tossed in a slow-cooked ragù of porcini mushrooms and fresh tomatoes, finished with butter and herbs.

Ingredients
9 items- 350 gPorcini MushroomsOr 150g dried porcini (rehydrated) or other edible mushrooms
- ThymeFresh thyme leaves
- 450 gPomodorini PizzutelloAlternative: San Marzano tomatoes, tomato passata, or peeled tomatoes (400g)
- 250 gPappardelleFresh egg pasta; can substitute with tagliatelle
- 1 pcsShallotOne shallot, finely chopped
- ParsleyFresh parsley, chopped
- ButterA small knob of butter for finishing
- SaltTo taste
- Extra Virgin Olive OilFor sautéing
Method
- Cut the small tomatoes in half and blanch them in boiling salted water for about 5 minutes.
- Drain and pass through a food mill to obtain a smooth sauce.
- Clean the porcini mushrooms: dice the stems and slice the caps.
- Finely chop the shallot.
- Chop the parsley and mix with the thyme leaves.
- In a pan (preferably non-stick avoided), heat a drizzle of extra virgin olive oil and sauté the shallot until translucent.
- Add the porcini mushrooms, turn the heat to high, and salt immediately to extract their liquid.
- Cook until the mushrooms start sticking to the pan (the water of vegetation has evaporated).
- Add the tomato sauce and a little water (rinsing the bowl), stir.
- Lower the heat, cover partially, and simmer for 40 minutes.
- Meanwhile, cook the pappardelle in plenty of boiling salted water for 1 minute (if fresh) or according to package instructions.
- Drain the pasta and transfer it to the pan with the sauce. Add a knob of butter and toss gently.
- Serve garnished with fresh parsley and thyme.
