Pasta with Potatoes, Sausage, and Provola

A delicious one-pot pasta dish with potatoes, sausage, and provola cheese. Perfect for fall, using seasonal ingredients like leek and rosemary. The sausage releases its flavors into the creamy potato sauce, while provola adds a stringy texture.

Ingredients
12 items- 160 gShort PastaUse short pasta like mezze maniche, tortiglioni, or rigatoni.
- 300 gSausageCan use sweet, fennel, or spicy sausage; also salamella.
- 300 gPotatoesAny type of potato works; cooking time may vary.
- LeekCan substitute with shallot or white onion.
- RosemaryFresh rosemary sprig; use only the tender needles.
- 1 pcsGarlicOne clove, crushed and left in skin.
- 50 gPecorino FrescoAlternatively, use Parmigiano Reggiano or a mature pecorino.
- 10 gProvolaCan substitute with scamorza (plain or smoked).
- Extra Virgin Olive OilUse for cooking and finishing; to taste.
- 1 tbspTomato PasteTriple concentrated tomato paste; double concentrate also works.
- PepperBlack pepper, freshly ground, to taste.
- SaltAdd at the end if needed; sausage and cheese already provide salt.
Method
- Peel the potatoes, place them in a bowl of cold water, then cut them into small cubes.
- Finely chop the leek.
- Remove the sausage casing and finely chop the meat with a knife.
- Select the tender rosemary needles and finely chop them.
- Slice the provola then cut it into small cubes.
- Crush the garlic clove and leave it in its skin.
- Heat extra virgin olive oil in a large pan with high sides. Add the garlic and the chopped leek.
- Add the sausage and break it up with a wooden spoon.
- Once the sausage has released its fat and browned, drain the potatoes and add them to the pan.
- Add the chopped rosemary.
- Remove the garlic.
- Add black pepper.
- Add hot water (from a separate pot) until it just covers the sausage and potatoes.
- Add the triple-concentrated tomato paste.
- Cover and cook until the potatoes are tender (5 to 15 minutes depending on the potato type).
- When the potatoes are cooked, add the pasta and stir well.
- Bring the reserved hot water to a boil again and add enough to cover all the ingredients again.
- Cook the pasta for 3 minutes less than the package instructions, stirring occasionally.
- When the pasta is ready, stir in extra virgin olive oil and freshly grated pecorino (or parmesan).
- Add the provola cubes, let the dish rest for 40–60 seconds, then stir gently to incorporate the melted cheese.
- Taste and adjust salt if needed (the sausage and cheese are already salty). Add more pepper if desired. Serve immediately.
