Beer Meatballs

Stefano Barbato's ultimate beer meatballs, incredibly soft inside with a creamy, flavourful sauce made from onions, beer, and a touch of tomato concentrate. A perfect second course.

Ingredients

- MilkHalf a glass; enough to moisten the meat
- ParsleyA handful, finely chopped
- 1 pcsEgg(optional) — Optional, but recommended for binding
- SaltTo taste
- 50 gGrated Parmigiano ReggianoAbout 40-50 g; use good quality
- BreadcrumbsAs needed to bind the mixture
- Black PepperTo taste
- FlourFor dusting the meatballs
- 40 gButterAbout 30-40 g
- 1 pcsGarlicOne clove, peeled and halved
- OnionA large amount, finely chopped
- 1 tbspTomato PasteDouble or triple concentrate
- 330 mlBeerOne 33 cl (330 ml) can; lager or ale works
Method
- Place the mixed minced meat (beef and pork) in a bowl and crumble it well.
- Add half a glass of milk – the meat will absorb it immediately.
- Add parsley, one egg, a pinch of salt, and the grated Parmesan cheese. Mix well.
- Add breadcrumbs little by little until the mixture reaches a soft but workable consistency (the dough should not stick excessively to your hands).
- Add black pepper and knead briefly to distribute evenly.
- Shape the mixture into meatballs of equal size and place them on a cutting board.
- Lightly flour the meatballs, rolling them between your hands to form a thin outer layer.
- Gently flatten each meatball slightly – they should not be perfectly round.
- In a large, tall pan, melt butter with a halved garlic clove (skin removed).
- Once the butter is hot, arrange the meatballs in a single layer covering the bottom of the pan and brown them on all sides, shaking the pan occasionally.
- Finely chop an abundant amount of onion.
- Add the chopped onion to the pan, salt lightly, and stir. Cook covered on medium-low heat for about 10 minutes.
- Add one tablespoon of tomato concentrate and stir well.
- Pour in a 33 cl (330 ml) can of beer – enough to almost cover the meatballs. Increase heat and bring to a boil.
- Cover the pan, lower the heat, and simmer for 20 minutes.
- Remove the lid and let the sauce reduce slightly until creamy.
- Serve the meatballs with the creamy onion-beer sauce.
