Ingredients
9 items- 700 gCarne Magra di MaialeUse shoulder, leg, or loin
- 300 gPancetta o LardoFatty part, can substitute with lard
- 12.5 gSaltPer kilogram of meat mixture; adjust to taste (12.5–13 g)
- Black PepperTo taste, generous amount recommended
- White Wine(optional) — Splash to soften the mixture
- Garlic Powder(optional) — Optional, to taste
- Fennel Seeds(optional) — Optional, to taste
- Chili Pepper(optional) — Optional, for spicy version
- Paprika(optional) — Optional: sweet, smoked, or Hungarian paprika
Method
- Combine 700 g lean pork (shoulder, leg, or loin) with 300 g fatty pork (pancetta or lardo).
- Add 12.5–13 g of salt per kilogram of meat mixture.
- Add black pepper to taste (generous amount recommended).
- Optional: add garlic powder, fennel seeds, chili, or paprika according to preference.
- Knead the mixture for 5–6 minutes until it becomes sticky and holds together.
- If desired, add a splash of white wine while kneading to soften and improve texture.
- Wrap the mixture tightly in plastic wrap and refrigerate for at least 24 hours to mature.
- After 24 hours, form sausages on a sheet of plastic wrap: place a portion of mixture, roll into a log, twist the ends, and seal.
- Refrigerate the formed sausages for another 24 hours before cooking (grill, pan, or use in pasta).
