- 1/2 lWater0.5 liter water
- 4 pcsChicken Breastthin slices
- Butter(optional) — a knob (or substitute with olive oil)
- Dry White Wine1/2 glass, dry white wine
- Prezzemolo Tritato Frescoa pinch of fresh parsley, chopped
- Flouras needed (00 flour)
Method
- Prepare the broth: In a pot, combine carrot, celery, onion, garlic, cherry tomatoes, turmeric, water, and a pinch of salt and pepper. Bring to a boil and cook for about 20 minutes. Strain and set aside.
- Prepare the chicken: Place the chicken breast slices on a cutting board and lightly wet them. Using a meat tenderizer, pound the meat from the center outward to an even thickness, avoiding tearing.
- Flour the chicken: Dredge each slice in 00 flour on all sides, then shake off excess flour.
- Cook the chicken: In a pan, melt a knob of butter (or heat olive oil) over medium heat. Add the chicken slices and cook for 35-40 seconds without over-browning. Flip the slices.
- Deglaze with wine: Immediately raise the heat to high and add the white wine. Let the alcohol evaporate for about 2 minutes. Season with a little salt and pepper (remember the broth already has salt).
- Add broth: Pour in a couple of ladles of the prepared broth. Reduce heat to medium and continue cooking until the sauce becomes creamy, about 8-10 minutes for chicken.
- Finish: Turn off the heat, stir in fresh chopped parsley, and serve immediately.
