A golden, soft onion quiche that smells like home. Sliced onions are gently cooked in butter and oil, then folded into a creamy egg and Gruyère filling and baked in a brisée pastry.

Method
- Cut the onions into slices about 1 cm thick.
- Cook the onions in a pan with butter, olive oil, salt, pepper, and a splash of water until softened and slightly golden.
- In a bowl, whisk together the eggs and cream.
- Grate the Gruyère cheese into the egg mixture and add black pepper.
- Let the cooked onions cool slightly, then add them to the egg mixture and stir to combine.
- Prick the brisée pastry all over with a fork.
- Pour the filling into the pastry shell.
- Fold the edges of the pastry over the filling.
- Brush the pastry edges with a mixture of beaten egg and cream.
- Bake in a preheated oven until the quiche is golden and set.
