A golden, soft onion quiche that smells like home. Sliced onions are gently cooked in butter and oil, then folded into a creamy egg and Gruyère filling and baked in a brisée pastry.

Method

  1. Cut the onions into slices about 1 cm thick.
  2. Cook the onions in a pan with butter, olive oil, salt, pepper, and a splash of water until softened and slightly golden.
  3. In a bowl, whisk together the eggs and cream.
  4. Grate the Gruyère cheese into the egg mixture and add black pepper.
  5. Let the cooked onions cool slightly, then add them to the egg mixture and stir to combine.
  6. Prick the brisée pastry all over with a fork.
  7. Pour the filling into the pastry shell.
  8. Fold the edges of the pastry over the filling.
  9. Brush the pastry edges with a mixture of beaten egg and cream.
  10. Bake in a preheated oven until the quiche is golden and set.
