Method
- Cut the pork sausage into 5 cm chunks.
- Lightly dust the chunks in flour, shaking off excess.
- Brown the sausage in olive oil in a single layer until golden. Remove.
- In the same pot, add a knob of butter and the soffritto (celery, carrot, onion). Lower the heat and sauté for a few minutes.
- Season with a pinch of salt and pepper.
- Return the sausage to the pot.
- Deglaze generously with red wine (drown the sausage).
- Add sage, rosemary, and crushed juniper berries.
- Cover with a small gap and cook on low heat for 45 minutes.
- Prepare the polenta: bring water to a boil, add salt, and rain in the polenta flour. Cook for 30-40 minutes (or as per package instructions).
- Serve: spoon polenta onto a plate, make a well in the center, and top with the creamy sausage.
