Stewed Squid (Totani in Umido)

A classic Italian home recipe: tender and flavorful totani (squid) slowly stewed in a tomato-based sauce with garlic, chili, capers, and white wine. Perfect for 'scarpetta' dipping with bread.

Method

  1. Clean the totani: separate the tentacles from the body, remove the innards, keep only the tentacles.
  2. Remove the beak from the tentacles and cut off the eyes.
  3. Cut the body into rings and halve the tentacles.
  4. In a pan with high sides, heat a drizzle of oil and sauté a clove of garlic and a piece of fresh chili.
  5. Add desalted capers and stir.
  6. Add the totani and sauté well.
  7. Increase the heat and deglaze with a glass of white wine.
  8. After the alcohol has evaporated, add a little tomato concentrate and tomato passata, salt, pepper, and mix well.
  9. Cover and cook for about 20 minutes.
  10. Serve hot, with bread for dipping.
